Having problems with latin1 character ser in MySQL, I want to change this to UTF8. Could you help me ?

Thanks for bringing this to our attention. I've filed a bug report regarding supporting UTF8 by default on all appliances.

Meanwhile, there's a nice blog post about converting MySQL databases to different character sets here.
