There is any way to install an GUI Desktop for OpenVPN Client? otherwise I dont know how do I use client if there isn't any Desktop environment ?

Not really
The OpenVPN appliance includes some helper scripts to make life easy when you configure it from scratch. It also has quite good documentation.
I have set it up locally (for testing) but haven't actually used it that much. I suggest that you have a go getting it working from the docs and if you get stuck, post back and I'll try to help you out.

I have some basic knowledge on how to operate the command line.
I understand that client must obtain the rsa keys and cert from the server, but if I wish to use openvpn with desktop in your case client comes without destkop and I thought there is a solution to install gnom deskop because I have tried dozen solutions and it doest work ..
In this case I have just one solution is to install your turnkey openvpn as an server, build the key and an srt and then configure the client with openvpn on other linux or windows.

What are you trying to do?
Gateway is where you have the appliance running on the internet (e.g. Amazon). You then connect to the internet via a VPN tunnel through the appliance. You would use that if you use insecure wifi and want to ensure you are using a secure channel. It's more-or-less what you get when you purchase a VPN for web browsing (to get around geo-blocking for example). The only difference is that you are using your own server.
Site-to-site is when you want to access a remote LAN securely, or link 2 LANs across the internet. E.g. access your work's LAN when you are out on the road.
I can't be sure, but it seems that you are hoping to use it as a "Gateway". And if you follow the docs it explains how to create the client profiles. And then how to how to transfer the client profiles. You then load that info into whatever VPN client you are using. Maarten has suggested some above.
