Another way to go may be to use the unofficial GitLab Debian repo. See here.
Obviously it is not signed, nor is a known quantity (ie I have no idea who hosts it and/or how legit they are) but I assume (perhaps naively?) that it should be ok...!?
It seems to get regularly updated too which may be a handy thing...
Only thing is whether it may be best to try to install to the GitLab appliance, or to install to Core... Either way TKLBAM will need a bit of tweaking to make it work right (to make sure all the repos etc are backed up).
