Looking back on what my upgrade path was like, I would not recommend upgrading TKL GitLab.
The TKL VM is a great way to introduce people to GitLab, but if you are serious about using it and you don't want it to consume all your time, then Omnibus is the way to go.
I don't think there is an easy way to switch to Omnibus because it requires changing data engines from MySQL to PostgreSQL.
I personally will stick with the TKL now that I have learned so much about how it works. Also, my upgrade path changed the data engine to MariaDB and I like what that community is doing.
TKL for eval, Omnibus for PROD
